Winemaker Antonio Serrano was born in Zaragoza, Aragón and has sharpened his cellar skills in wineries around the world, from France to the United States and Australia to Spain. When it comes to grape varieties, he’s particularly interested in Garnacha, Syrah, and Pinot Noir, but is most inspired by “moments, feelings, and places” when he’s at work. Wine makes itself, he says modestly of his role: “I just try to make sure that it follows the path dictated by the set of circumstances each year.”

He is drawn to winemaking because of the unique set of challenges and rewards each day brings, and sees it as a lifelong learning process. The Paniza vineyards, with their stony and slate soils, altitude more than 700 meters above sea level, and decades-old vines, allow for unique place-specific expressions of the D.O.P. Cariñena, he says, “and this is the identity that we must transmit and differentiate in our wines.”

He’s also enthusiastic about the area’s rich offerings in nature, sports, and gastronomy. His favorite local getaway is the Sanctuary of the Virgen del Aguila, “it’s a fantastic place that you cannot miss.”
